Air Fryer Cajun Catfish with Hushpuppies Recipe
Cajun Food is a favorite across America, especially at Mardi Gras time. For a change from the omnipresent gumbo, fried oysters, shrimp po boys, and Étouffée, you’ll want to use your air fryer to create this delicious version of . Hush Puppies are a must with catfish, so you’ll definitely want to accompany the fish with Air Fryer Hush Puppies and your favorite coleslaw. Although this is a great meal to serve at Mardi Gras, it’s so good, you’ll want to serve it year round. If you like spicy hushpuppies, substitute jalapeño peppers for the red peppers in the recipe. If catfish isn’t available in your area, you can use any mild white fish. These recipes have been loosely adapted from Skinny Taste Dinners, an excellent air fryer cookbook which is highly recommended for air fryer users.

Catfish:


6 Servings

1 cup buttermilk
1 teaspoon Louisiana-style hot sauce
2 pounds catfish fillets, cut into 6 serving size pieces

Crispy Coating:
3/4 cup cornmeal
6 tablespoons flour
1 to 3 teaspoons Cajun seasoning, according to taste

Olive oil spray
Olive oil
Lemon wedges and parsley, for garnish

  1. Catfish: Place the catfish fillets in a shallow dish.
  2. Mix the buttermilk and hot sauce; pour over the catfish and let sit 30-60 minutes.
  3. Meanwhile, mix the cornmeal, flour, and Cajun seasoning on a large plate.
  4. Spray a large air fryer basket with non-stick spray and heat the air fryer to 400°.
  5. Remove the catfish fillets from the buttermilk mixture, letting excess fall off of the fillets;
  6. Dredge the fillets on both sides in the cornmeal mixture; place them in a single layer in the air fryer.
  7. Brush lightly with olive oil.
  8. Let the fish cook 6 minutes; turn and brush the underside with olive oil.
  9. Continue to cook 5-7 more minutes or until the fish is just cooked through and is flaky.
  10. Remove from the air fryer, place on a serving plate, and garnish with lemon wedges.

Hush Puppies


6 Servings

1/2 cup cornmeal
1/2 cup flour
1 teaspoon Creole seasoning salt
1 1/2 teaspoons baking powder
1/4 teaspoon cayenne pepper
1/3 cup finely chopped red bell peppers (or substitute jalapenos for extra spicy)
1/3 cup finely chopped onions
9 tablespoons whole milk, (1/2 cup plus 1 tablespoon)

Olive oil spray
Olive oil

  1. Mix the cornmeal, flour, Creole seasoning, baking powder, and cayenne pepper.
  2. Stir in the bell pepper and onions; stir in the milk.
  3. Freeze the dough for 15 minutes or until thickened.
  4. Line a large air fryer basket with air fryer parchment paper (with holes punched in to allow air to get through); spray the parchment with olive oil spray.
  5. Using a 1" scoop, scoop balls from the dough and place them on the parchment (you may need to do this in batches).
  6. Brush with olive oil.
  7. Let the air fryer heat to 375°.
  8. “Fry” the hush puppies for 12-14 minutes or until cooked through.
